1. I cut along the chest bone to right before the cloaca (anus). This is the space I’ll be needing to free the body from the skin. Once all the feathers have been parted I gently work the skin from the beast area loose and slowly work down towards the rear of the bird.
2. With the chest region now free, I carefully move the skin over the knee, and pressed the knee free of it’s skin. Once the leg was completely separated from it’s skin I pop the hip out of it’s socket and cut the leg away from the body. The size of the muscles is noted down and afterward all tissue is removed.
